Step 1 — Restore the Edge (400 Grit)
Hold the knife at 15°–20°. Draw from heel to tip with light, even pressure. Repeat 5–10 passes.
Step 2 — Refine the Edge (1000 Grit)
Flip to the fine side and repeat with lighter pressure to polish the edge.
Step 3 — Hone
Use the built-in ceramic honing slot to remove any remaining burrs.
Step 4 — Clean
Rinse under clean water, dry thoroughly and store.
